✅ Carrageenan is a common food additive extracted from red seaweed. Manufacturers often use it as a thickening agent. Carrageenan has a variety of uses. It makes a clear gel.
✅ Use at about 1% (1g per 100g water). Sprinkle powder on warm water and blend. Very simple. The more powder used, the thicker the gel.
✅ Though it has no flavor or nutritional value, it is a useful thickening agent and stabilizer.
✅ Some manufacturers include it in products like chocolate milk, to stop the milk from separating. It can also subsitute for fat in non- or low-fat foods and dairy replacement products aimed at the vegan market.

Carrageenan provides good stability and mouthfeel and have to be added as a suitable stabilizer during the industrial processing. These carrageenans help in optimizing stability performance, avoiding whey separation and precipitation of casein particles dairy products as well as extending the shelf life, and contributing to a nice smooth mouth feel of the final product.
